Lorraine’s Favorite Butternut Squash

I made this the first time a couple of weeks ago, and have made several times since. It is the simplest, most delicious butternut squash I have ever eaten, and is now my latest craving! It goes so well with so many dishes. Last night we made a simple dinner of last week’s Chinese Greens, and just plain Black Beans and served some leftover Cilantro Yogurt/Mayo Dip. Seriously yummy!
1 Butternut Squash, peeled, seeded and diced
Eatwell Farm Smoked Chili Salt
Freshly grated Ginger
Butter
Put the diced squash into a baking dish that has a good lid. Dot with butter (in my book, more butter is always better, but that’s me!), sprinkle on Smoked Chili Salt and grated ginger. Cover tightly and bake in oven, preheated to 350 F, until the squash is tender.
