Daikon Raita
Bon Appetit March 2013Makes 1 1/2 Cups
1 cup Plain Whole Milk Yogurt
1/3 cup chopped fresh cilantro
1 Serrano Chile, seeded, finely chopped
2 TB finely chopped Red Onion OR use Yellow Onion from this week’s Share
1 TB fresh Lime Juice
1 cup coarsely grated Daikon, plus more for serving
Salt
Olive Oil and Cilantro Leaves for serving
Mix together yogurt, cilantro, chile, onion and lime juice. Gently fold in daikon; season with salt. Serve raita drizzles with olive oil and topped with cilantro leaves and more grated daikon.
