Ridiculously Easy Pepper Dip

When I went to Vienna, over 30 years ago, one of my favorite foods was Liptauer Cheese. Sweet Paprika flavoring something like a cream cheese is just so yummy. Since we always have an abundance of our Lunchbox Peppers I thought there must be a simple creamy cheesey something I could make, and voila, here it is!
1 clove Garlic, roughly chopped
1 lb Roasted Lunch Box Peppers, roughly chopped
1 package Cream Cheese
1/4 cup Mayonnaise
2 TB Lemon Juice
Using a food processor, pulse the garlic until finely minced. Add the roasted red peppers, cream cheese, mayonnaise and lemon juice, and process until smooth. Spoon the dip into a pretty bowl, and cover tightly with plastic wrap. Chill until ready to serve, at least 30 minutes or up to 2 days. Serve the finished dip with wedges of warm pita bread or an assorted of colorful fresh vegetables for dipping. The cucumbers and raw zucchini would be perfect choices!
